Energize day with a healthy brunch that will sustain your energy for the entire day.
This simple meal is a well-composed nutritional bounty and can be served as a quick meal–for brunch, lunch, or any other time. Amounts are subjective depending on whether preparing as your new favorite go-to nosh to enjoy all week or a special occasion meal to nourish the day.
Ingredients:
2 cups mixed greens (some options arugula, lettuces, spinach, arugula, Swiss chard, dandelion, endive, mustard greens, and radicchio)
1 cup cooked super grain medley (barley, quinoa, and brown rice)
1/2 avocado, diced
1/2 cup cooked black beans
1/2 cup roasted sweet potato, diced
1/2 cup sautéed kale
2 eggs, poached or fried
2 tablespoons pumpkin seeds
1/4 cup kimchi relish
A handful of sprouts
Salt and pepper, to taste
Sriracha or hot sauce, to taste (optional)
Instructions:
Start by preparing the mixed greens. Rinse and dry them thoroughly, then place them in a large bowl.
Cook the super grain medley according to package instructions. Set aside.
Cook the black beans according to package instructions, then set aside.
(Tip prepare the night before and make extra for other meals)Preheat the oven to 400°F (200°C). Cut the sweet potato into small cubes and spread them on a baking sheet. Drizzle with olive oil and season with salt and pepper. Roast in the oven for 20-25 minutes, until the sweet potato is tender and lightly browned.
While the sweet potato is roasting, sauté the kale in a pan over medium heat with a drizzle of olive oil. Cook for 5-7 minutes, until the kale is tender and slightly wilted.
Toast the pumpkin seeds in a dry skillet over medium heat for 2-3 minutes until lightly browned and fragrant.
To assemble the bowl, start by placing the mixed greens in a large bowl or on a serving platter. Add the cooked super grain medley on top of the greens, followed by the diced avocado, black beans, roasted sweet potato, and sautéed kale.
Place the poached or fried eggs on top of the vegetables and grains, and season everything with salt and pepper to taste.
Spoon the kimchi relish over the eggs and sprinkle the toasted pumpkin seeds and sprouts on top.
If desired, drizzle sriracha or hot sauce on top for a spicy kick.
