Shrimp & Zucchini Skewers are a light grilled dish that’s high in protein and quick to make. These skewers can be served as an appetizer with tzatziki dipping sauce or as a main course paired with salad, rice, and/or pita bread.

Ingredients
3 tablespoons extra virgin olive oil
2 tablespoons fresh lemon juice (from about 1 lemon)
½ teaspoon salt
¼ teaspoon ground black pepper
1 teaspoon dried oregano
1 teaspoon dried dill
1 teaspoon garlic powder
1 pound large (21 to 30 per pound) shrimp, peeled and deveined
1 medium zucchini, cut in half and then crosswise into wedges
Instructions
Whisk together olive oil, lemon juice, salt, pepper, oregano, dill, and garlic powder. Add shrimp and zucchini and toss to combine. Refrigerate for 15 to 20 minutes.
Remove from the refrigerator and thread onto skewers. Each skewer should have about 3 shrimp and 4 wedges of zucchini
Heat the grill or a grill pan to medium-high heat. Grill the kebabs for 2-3 minutes, then flip and cook 2-3 minutes on the other side until shrimp turn pink and opaque.
Notes
If using wooden skewers, be sure to soak them in water before putting the food on them.
